We have been asked for the recipes for the Rock Cakes and the shortbread that were served at the Celebration. Here they are:


Ginger Shortbread:

  • 1/4 cup margarine
  • 3oz castor sugar
  • 3oz self raising and 1oz plain flour
  • 1/2 teaspoon ginger
  • 1oz almonds.

Roll out to 1cm thickness, poke with fork for decoration. Line tray with grease proof paper and bake at 325C until brown (approx. 10 mins)


Rock cakes:

  • 1/2 lb (2 cups) flour;
  • 4 oz butter;
  • 4 oz sugar;
  • 3 oz currants or sultanas;
  • 1 egg
  • a little baking powder & salt

Rub in butter until the mixture is the consistency of breadcrumbs. A little milk should be added if the mix is too dry after the egg is mixed in. Add currants/sultanas and mix to a stiff dough. Slap spoonfuls onto greased baking tray. Bake 14 to 15 mins at 375 until golden brown on the edges and peaks.
